History Shiitake
Shiitake is originally from Japan. The mushroom owes its name to the tree on which it mainly grows in Japan: the Shii tree. The tree species grows mainly in central and southern Japan.
In Japan and China, Shiitake has been used as a medicinal mushroom for centuries. In Chinese Traditional Medicine this mushroom is called Xiang gu.
Cultivation

In the past, Shiitake was cultivated by growing the mushrooms on pieces of tree trunk. Nowadays, Shiitake is grown by means of wood substrate cultivation. A wood substrate is an artificial soil that has been carefully composed.
For the cultivation of Shiitake, a wood substrate consisting of sawdust, straw and water is used.
