About Maitake

Maitake is found in North America, Europe and Japan. The fungus of this fungus consists of dozens of caps on stems that all come together at the bottom. Maitake can weigh up to 40 kilos with a diameter of 1 meter.

This fungus is also found in the Netherlands, but it is relatively rare here. The Dutch name is eikhaas. This name is mainly used to designate the fungus in the forest. Or to indicate an ingredient in a kitchen recipe. Egg tenderloin tastes delicious and is therefore often used in the kitchen.

Maitake as a medicinal mushroom

In Chinese Traditional Medicine this mushroom is called Keisho. However, internationally the Japanese name Maitake or the scientific name Grifola frondosa is usually used for this medicinal mushroom.

The Japanese name Maitake literally means 'the dancing mushroom'. According to Oxford Lexico, this name dates back to the 19e century. The name is said to be a reference to the happiness one experienced when one found this plant in the wild. In other words: Finding Maitake was cause for a dance of joy.

Maitake as a culinary mushroom

In Japan, Maitake is used both as a medicinal mushroom and as an ingredient for preparing the most delicious dishes.

The Maitake that has been cultivated for the kitchen, however, contains much less medicinal substances. Therefore, the flavored mushrooms are less suitable for use as medicinal mushrooms.

Cultivation 

When you walk through a forest in the fall, you can find many different mushrooms. In addition, one mushroom species seems to fill the entire forest, while you may speak of another species when you come across one specimen.

Maitake belongs to the latter category. Forage harvesters really have to search very hard, and have a little luck, to find a specimen.

Fortunately, Maitake is very easy to cultivate by human hands. A wood substrate is used to grow Maitake. This is a carefully composed soil consisting of sawdust or wood chips to which lime has been added.
